1 each 3.5 lb. or larger whole free range chicken (thawed)
Olive Oil
Kosher Salt
Fresh Ground Black Pepper
Granulated Garlic
Cajun Spice Blend
Rub whole chicken with olive oil and season with salt, black pepper, granulated garlic and Cajun spice. Let chicken rest in refrigerator overnight to absorb seasoning.
Place whole chicken on chicken roasting rack for the Convotherm Combi oven. Program Convotherm Combi Oven in Combi mode 350 F Crisp, and Tasty Level 4, and set core probe to 168F. Place Chicken in oven cavity and cook.
When cooking cycle is complete, allow chicken to rest for 7 to 10 minutes. Remove chicken from roasting rack and serve.
Cooking whole chickens in the Convotherm Combi produces a very moist chicken with a very crispy skin.
I like to serve this chicken to my family with a four cheese macaroni and cheese, and grilled asparagus.
